First Recipe

I got the idea for this from something posted on Pinterest. It was for a stuffed chicken breast with goat cheese and bacon. Well, I didn’t have goat cheese or chicken BREASTS so I revised it quite a bit, but it was deeeeelicious. Not horrible on points, either. I calculated 9 points per serving. You can also cut down on some of the points by switching to Neufchatel rather than full-fat cream cheese, but I had it left over from Christmas. Image

1 Package Chicken Breast Tenderloins (see photo)

1/2 Package Cream Cheese or Neufchatel Cheese, softened

4 Slices of Crisp Bacon

1 Tbsp Olive Oil

2 tsp minced garlic

Oregano, chives, salt, pepper (really, whatever spices you like)

Preheat oven to 350. Cook bacon until crisp (I assume you all know how to cook bacon, so I will not go into that). Mix bacon and garlic into cream cheese. Arrange the tenderloins on a plate and season. Place about 1-2 tbsp of cheese mixture on one tenderloin and place another on top. Secure with toothpicks. If you have a tenderloin left over, you can slice it open and stuff a little of the mixture inside. I served that one to my 21 month old since he doesn’t eat much. Bake for 15-20 minutes, or until chicken is cooked through.

 

I found this to be suuuuper delicious. I try to be as careful on points as possible for breakfast, lunch, and snacks so I can splurge a little like this at dinnertime. Happy eating!
